Fragrance · Critical
No perfume, cologne, or scented hair products on dinner nights —
non-negotiable at Sugita, Hatou, Mitani Bettei and Maeda. Even
strongly scented laundry detergent is perceptible at counter range. The chef's
composition relies on guests being able to read aroma; a small oversight here
can compromise the entire room.
At the counter
- ⏱Arrive on time or early. Omakase begins simultaneously for all guests. Plan to be in the room by 20:25 for any 20:30 sitting.
- 💍Protect the counter. Many counters are crafted from a single piece of Hinoki cypress — remove rings, bracelets and watches before sitting.
- 📷Photography. Food only — never the chef, never other guests at the counter.
- 💴Cash on departure. Sugita and Mitani Bettei especially. Carry ~¥80,000 per guest across the Tokyo & Kyoto weeks.
- 🙇Thank the chef. A sincere gochisousama deshita is more appreciated than any tip — tipping is not customary.

Sumo tickets are billed separately on confirmation. Out-of-pocket items (sake supplements, beverage pairings, gratuities) settle at each venue. Hotels, flights, Shinkansen and the Hokkaido week are not included.
Travel Notes
Getting around
- 📱Suica. Add a Suica card to Apple/Google Wallet — covers subway, bus and train across Tokyo, Kyoto, Osaka. Top up via your linked card.
- 🚅Shinkansen. Book via SmartEX (smartex.jp). Tokyo–Kyoto Nozomi is the fastest service. Luggage over 160 cm total must be pre-booked.
- 💴Cash society. ATMs at 7-Eleven and Japan Post accept international cards. Mitani Bettei, the geisha house, and several other rooms settle in cash.
- 📶eSIM. Activate before landing — Airalo, HolaFly or YO all work well across Japan. 4G/5G coverage is excellent everywhere on the itinerary.
- ⚡Power. 100V at 50/60 Hz. Two-pronged sockets. UK/EU travellers need a converter; US travellers do not.
The WhatsApp group
The dedicated WhatsApp group opens 48 hours before arrival and runs to departure. All confirmations, time changes, headcounts and small logistical notes flow through this channel. Tomoko, the local guides and Happy Camper are present in the group. New opportunities — a table opening, a change in availability — are presented here for discussion before any reservation is altered.
