Please arrive as scent-free as possible on every counter night — no perfume, no cologne, no strongly scented hair or body cream. Fabric softener on your clothes is perceptible at close range too; wash dining clothes in unscented detergent where possible. Non-negotiable at Sugita, Hatou, Mitani Bettei and Maeda — an unspoken rule at every high-end sushi, tempura and kaiseki counter in Japan.

🍣 At the counter
  • Arrive 10 minutes early — every venue, even the izakaya and pizza counter. Omakase begins simultaneously for all guests and the chef's timing depends on it.
  • 💍No large watches or jewellery on the wrists. Counters at this level are crafted from a single piece of Hinoki cypress — anything hard scratches the wood and the fine tableware.
  • 🍣Smaller pieces can be requested. For sushi counters, ask the chef for slightly smaller-sized pieces if preferred — entirely normal.
  • 🥢Flag dislikes in advance. Any ingredients you cannot eat or strongly dislike — let Tomoko know ahead of time, not at the counter.
  • 📷Photography. Food only — never the chef, never other guests at the counter.
  • 💴Cash on departure. Sugita and Mitani Bettei especially. Carry ~¥80,000 per guest across the Tokyo & Kyoto weeks.
  • 🙇Thank the chef. A sincere gochisousama deshita is more appreciated than any tip — tipping is not customary.

🚄 Getting around
  • 📱Suica. Add a Suica card to Apple/Google Wallet — covers subway, bus and train across Tokyo, Kyoto, Osaka. Top up via your linked card.
  • 🚅Shinkansen. Book via SmartEX (smartex.jp). Tokyo–Kyoto Nozomi is the fastest service. Luggage over 160 cm total must be pre-booked.
  • 💴Cash society. ATMs at 7-Eleven and Japan Post accept international cards. Mitani Bettei, the geisha house, and several other rooms settle in cash.
  • 📶eSIM. Activate before landing — Airalo, HolaFly or YO all work well across Japan. 4G/5G coverage is excellent everywhere on the itinerary.
  • Power. 100V at 50/60 Hz. Two-pronged sockets. UK/EU travellers need a converter; US travellers do not.
